This sweet potato curry is dead easy to make and tastes amazing. You can use the panch phoran that was in my last post. Quick, nutritious and delicious, this is ideal for a quick dinner or lunch.

You will need:
- A few tablespoons of oil
- 1 teaspoon of panch phoran
- 1 onion, chopped finely
- 2 cloves of garlic
- About 400g of sweet potatoes, chopped
- A pinch of coriander
- A squeeze of lemon or lime
- Salt
Put some water in a pan , add salt and bring to the boil. Then add the sweet potato.
While this is boiling, heat the oil in a pan and add the panch phoran. Fry it for a minute or two, then add the garlic and continue to fry from another minute.
Add the onion and fry the whole mixture until the onions are translucent and starting to take on a little colour.
By now the sweet potatoes should be cooked. Drain them and let the steam evaporate for a minute.
Add them to the onion mixture and stir well. Add the coriander, the lemon/lime juice and the salt, and then serve.
Goes very well with some chapatis.
