Panch Poron (literally 'five spices') is another Indian spice mix which is easy to make and makes a real difference to curries. Try it in place of garam masala, it tastes lovely!
There is no need to grind this mix but I'm sure it would be just as nice if you wanted to, it would save you getting a big taste of one of the spices when you bite in to one.
You need:
- 2 tablespoons of fenugreek
- 2 tablespoons of nigella seeds
- 2 tablespoons of mustard seeds
- 2 tablespoons of fennel seeds
- 2 tablespoons of cumin seeds
Combine all the spices and toast in a pan until they start giving off their aroma, then store in an airtight jar and use within a couple of months.
To cook with it, just fry the whole spices in oil when you start a dish.
The ground version of this mix is usually only used to sprinkle top of chutneys but I don't see why you couldn't use it like any other spice mix as a powder.

ReplyDeleteAck, fennel seeds! I hate that explosion of black licorice-y flavor you get when you bite into one! I use ground fennel instead, I'm a wuss.
