Long Green Bean Curry

I made this last night and it was delicious. It one of the quickest curries to make that I've ever seen or made yet it tastes very fresh and is packed full of flavour. Unfortunately, as usual, I had nearly eaten it all before I thought taking a photograph for this blog but I'm sure I will cook it again soon so hopefully, sooner or later, there will be some pictures to accompany the recipe. This would be a fantastic starter or a quick lunch.

You need:

1 teaspoon of cumin seeds
1 tablespoon of oil
2 cloves of garlic
1 onion
1/2 teaspoon of turmeric
2 or 3 handfuls of long green beans, chopped
2 or 3 small tomatoes
A squeeze of lime/lemon
salt to taste



Heat a large pan and add the cumin seeds, then roast them until they start to brown slightly and you can smell the aroma. Be careful not to burn them though.

Add the oil and then the garlic. Fry the garlic until it starts to take on some colour. Brown is good but, again, be careful not to burn it.

Add the onion and cook for a couple of minutes, it just needs to soften, no need for any colour.

Add the turmeric and fry for a minute or so more just to cook the spice out a little bit.

Add the green beans and fry them for a couple of minutes just to soften slightly.

Then add the tomatoes and cook the whole mixture for a couple of minutes more.

Finally, add the lime or lemon juice, about half a lime squeezed in is enough. Add as much salt as you like, you should only need a pinch really though.

Now it is ready. Serve with some freshly made chapatis .

All of this should take about 10 minutes and you have a great tasting, fresh curry!

  11. Hmm, I've never seen turmeric for sale here in Hawaii. We have loads of white flower & red 'shampoo' ginger though.
